How to Measure Moisture in Food
Moisture content in food materials is critical—it affects the taste and quality of finished products. Keeping moisture within the proper range is key to stable production and food quality. This article explains how the VicoMeter rapid halogen moisture analyzer measures moisture content in food materials and delivers reliable food moisture data in just a few minutes.
In the food industry, moisture is tested frequently before, during, and after production for compliance. Taking grain as an example, this article shows how to obtain food moisture content quickly with a VicoMeter rapid halogen analyzer.
VicoMeter is an expert in rapid moisture analyzers, having provided effective solutions for numerous food industry users.
Moisture affects food's texture, consistency, appearance, flavor, and shelf life; accurate determination and strict quality control underpin stable production.
Regulations specify moisture ranges. In bulk purchasing especially, moisture determination protects buyers from water-padded, low-value products.
French-fry frying temperature is adjusted to potato moisture; strict control ensures golden, crispy fries and stable output.
The oven method is the regulatory reference, but its inefficiency hampers production. The halogen analyzer is an excellent alternative—simple, fast, and reliable within minutes.
The halogen analyzer can perfectly replace the oven method with unmatched advantages. Whether it can do so was addressed inCan Rapid Halogen Moisture Analyzers Replace the Oven Method?as discussed in that article.
The VM-E10's rugged design ensures stable results and long life in laboratories or harsh production environments; one-touch start delivers results in minutes, with or without trained operators.
Position the VM-E10, warm up for 30 minutes, level it (center the bubble), and calibrate weighing and temperature—then begin the corn flour workflow. (Installation, environment, warm-up, and calibration are covered inPreparation Before Formal Measurement with a Halogen Moisture Analyzeras discussed in that article; click the link to learn more.).

1. Place the empty sample pan on the triangular support, preheat for 1 minute, and press the tare key to zero.

2. Quickly and evenly spread about 5g of corn flour over the sample pan with a spatula and wait for the reading to stabilize.

3. Once stable, press the start key; the corn flour moisture result appears on screen in a few minutes.
Heating mode: Standard
Heating temperature: 160°C
Shutdown mode: automatic (1mg/60s)
Sample size: 5g
Warm-up: standby, 100°C; at standby temperature, preheat the empty pan for 1 minute, then tare.
Use the VicoMeter VM-E10 halogen moisture analyzer to measure corn flour moisture for quality control. The measured result was 14.36 %MC.
Corn flour tested against the oven method: the VM-E10 delivered matching results in minutes versus hours—a clear advantage.

Chart Notes
Recommendation: measure 6 corn flour samples and take the average.
Green line:Moisture content determined by the oven method (average).
Red line:Moisture content determined by the VM-E01 rapid halogen moisture analyzer.
| Test Method | Average | Standard Deviation | Measurement Time |
| Halogen | 14.54% | 0.03 | 12min |
| Oven Method | 14.56% | 0.01 | 90min |
Conclusion
The VM-E10 is ideal for laboratories and production floors, rapidly and accurately determining the moisture of raw materials, intermediates, and finished products in the food industry.
